- Take 250 grm boiled jackfruit
- Take 1 tsp termeric powder
- Prepare 1 tsp salt
- Get For achar masala :-
- Prepare 1 tbsp coriander seeds
- Prepare 1 tbsp carom seeds
- Take 1 tbsp cumin seeds
- Make ready 1 tbsp fennal seeds
- Make ready 1 tbsp yellow mustard seeds
- Take 10-12 dry red chillies
- Take For achar :-
- Take 1 cup oil
- Take 1 tbsp salt
- Take 1/2 tbsp black salt
- Prepare 2 tbsp red chilli powder
- Take 1 tbsp kalaunzi
- Take 1 tsp asafoietida
Steps to make Jackfruit Pickle:
- In a bowl add boil jackfruit in a sauce pan for only 5-6 min.strain the water completely.and leave jackfruit to dry up.you might have to pat it dry.add termeric powder and add salt mix it well properly.when cool and dry.
- Now take a tawa add coriander seeds,add carom seeds,add cumin seeds
- Add cumin seeds,add dry red chillies and add yellow mustard seeds.now dry roast all ingredients for 5-6 min.now take a jar and put all the dry ingredients into the jar.
- Now grind it and make a smooth powder.achar masala is ready.now take a mixing bowl add marinated jackfruit add vinegar
- Mix it well.add achar masala powder mix it again.now coat all masala over the marinated jackfruit.
- Add mustard oil pour into the jackfruit mix it again.add kalaunzi
- Add red chilli powder,add salt,add black salt,add asafoietida
- Mix it again.take a jar and fill the jar with pickle.add oil, aroma is very strong.cool to room temperature and pour over the jackfruit.
- Now cover the jar with cloth and pack this tightly into jar.the oil should come above the jackfruit mixture.let the pickle mature for another 2-3 days before you consume it.for all pickles,ensure that it stays covered with oil,that they stays good throughout the year.pickle is ready.
